Director of the Soil Association Patrick Holden explains why he still milks his cows himself at weekends, and why Prince Charles is underrated
"It’s taken me 20 years to realise that change only happens from the ground-up. Ministers have to do what the public wants. We need a proper food strategy for the country to feed itself; using sustainable energy and renewable resources. To achieve that we need an army of supporters. Environmentalism was the great movement of the 20th century – preserving wildlife, woods and ponds. This century we need to create a food movement for change, producing food in harmony with nature. "
